Sweet Potato Quick Bread

Saturday morning I found myself washing dishes, mentally planning what I would be baking that morning. I did a mental check list of what needed to be used in my fridge and pantry. I had just gotten my basket and knew I had a few things that needed to be used up before we dug into our new basket of fruit and veggies. I had quite a few sweet potatoes to use. Usually I do mashed sweet potatoes, but a mama can only make that so many times. I needed something new to help me use up those orange potatoes in my pantry. Then it dawned on me....Why not make sweet potato bread. I thought I was coming up with something pretty original, until I googled it and realized many other mamas had already had my great idea. I checked out a few of their recipes and then came up with the recipe below. It is a super moist bread, which was a crowd favorite in my home. In fact it only lasted about 2 days here. We all gobbled it up as soon as we could. Yep it is that good. So make some quick bread for your family tonight. Serve it for breakfast, a snack, or a yummy dessert. We were finding any excuse to have it.... I seriously need to make some more....yum:)

Sweet Potato Bread
1 ½ cups sugar
1 stick butter
2 eggs
1 ¾ cup flour
1 tsp baking soda
¼ tsp salt
½ tsp ground cinnamon
½ tsp ground nutmeg
1/3 cup water
1 cup cooked sweet potato puree (I did mine in the pressurecooker)
½ cup white chocolate chips (optional)
1 tbl flax seed (optional)
1 tbl bran (optional)

Combine sugar and butter in a mixing bowl, beat until creamy. Add water, eggs and puree. Beat until smooth. Add dry ingredients and beat. Stir in chocolate chips. Pour batter into a greased 9x5 loaf pan. Bake at 350' for about 1 hour.

  18. I just ran across the yahoo story and decided to come by. Everything I have read is pretty much how my wife and I live {I am disabled on a fixed income}. 15yrs. ago I was living high on the hog in a home with a swimming pool and hot tub 3bd rooms and a game room with 2 new cars parked in the garage, credit cards AND all the bills and headache to go along with it and a wife that didn't think she could live any other way....and wasn't willing to try. I got rid of everything including the wife. Now I am remarried to a wonderful woman that is willing to try living within our means{ and we are doing it quite well I might add!}. In 10yrs. we saved enough to buy a home and pay cash and our car is paid for also just off my money I have coming in. All we have is just the usual insurance, utilities, and food expenses and then we put money in savings faithfully every month .What ever is left is what we live on thru the month.Like you we use just one tank of gas a month trying to do as much of our shopping as we can in as little distance as possible, cooking at home and we both like to cook {but we do step out every once in awhile}. We both work around the house and do the yardwork together. We gave up alot for the life we have now But the biggest thing is I love my new wife for being willing to try this life, not having all those bills, and not having the headaches from the debt I use to have...I have to say life is good! So to the people that read her blog, what she is saying can work and will work if YOU have the guts to try and make it work. My hat is off to this wonderful lady and her family!   19. I just made sweet potato bread for the first time this year too! I had some sweet potatoes that I'm trying to use up from our garden :-) Definitely delicious :-)

  20. My favorite potato recipe is Lynn's Scallop Potatoes. I monstered this together from a number of recipes and conformed it to our liking. Normally, I do not like Scalloped Potatoes but this is great!

    4 medium potatoes peeled and sliced and left in cold water in the frig overnight. I usual boil them for 15 miuntes before I make the sauce. Since I have a fussy no hard potato person in the house, hence no "al dente" for that one.


    3-4 T butter
    2-3 T all-purpose flour
    1 medium onion cut up
    2 1/4 cups milk (usual use half and half if I have it or evaporated milk is great or reg.)

    In saucepan on low-medium heat melt butter, stir in flour and add onion. Cook and stir for at least 2 minutes. Remove from heat and slowly stir in milk with a whisk. Return to burner and cook until thick. When I think done I usually cook it a bit more--it doesn't hurt. You'll get the feel for the thickness you like after the first time. Remove from heat and stir in salt and white pepper (or black). Preheat over to 350 degrees.

    Stir in raw or partially boiled potatoes into white sauce, increase heat a bit and get the spuds hot. Butter, grease or spary 2 quart casserole dish or 9x9x2 pan. I like a glass pan for this. Dot dish with butter as you do a pie, and then I top with Old Bay Seasoning but go with your favorite spices if you like paprika or rosemary (add something liek that half way through cooking). Spinkle with however much parmesan cheese you like--none or over 3T. Bake uncovered for 45 minutes or until spuds are done and top is brown.

    It never stays around our house long, so I have to admit I have no idea if this freezes well or not. If you like it, I suppose I'll find out. It doesn't get a funky flavor from being in the frig and heats up well the next day. I use this basic rue recipe for many other things such as milk-based soups, etc.

  26. I am in the process of making this bread and I'm stumped. It lists 1/3 C. water in ingredients list but no where how to use it. I got sweet potatoes from the store and they are yellow. The produce guy told me the yams are the red ones. I wasn't sure which ones to get since you obviously used the red ones. Got the yellow sweet potatoes ... hoping it works out. So far it looks and tastes like banana bread.

  28. I only had an 8x4 inch pan so I put the extra batter into 4 cupcake tins.
    I baked those for 30 minutes or so & they were perfect.
    If I make these again I may make the whole batch muffins!

  29. made it this morning and loved it! I added a streusel topping to mine because I'm in love with the sugary/nutty goodness of it. it was delish! will definitely be making it again, and again, and again....

    and maybe a few more times after that.
