Weekly Printable Meal Plan with Recipes #6

Good Morning Lovelies! I am a tad late getting this menu up. Downton Abbey was a 2 hour show last night and oh my goodness! Did you all see it? So good! I swear they keep me on the edge of my seat every week. I won't give out any spoilers, but if you haven't watched it or caught up, please do so. It is getting better and better every week:)

Now for the menu this week. You will find both the meal plan and the recipes in this post and in a printable format. Also consult your pantry list before shopping. Make sure to restock what is running low. This month we stocked up on our beans and grains. I shared a picture on instagram, when hubby did the shopping for me this month. We found 25 lb bags of beans for under $20 at the lds cannery. So make your grocery list and start saving money on your groceries this week!

Slow Cooked Pork Wraps

1 lb. Pork Stew Meat
1 can Italian stewed tomatoes w/ green chilies
1 tbl red wine vinegar
3 green onions chopped
1 yellow bell pepper
garlic salt- season lightly

8-10 flour tortillas
mozzarella cheese for topping

  • Place all ingredients (minus tortillas and mozzarella cheese) in slow cooker. Cook on low 5-6 hours. Serve in flour tortillas with cheese sprinkled on top.

Cheesy Broccoli Soup

1 can (10 3/4 ounce) condensed cheese soup
1 cup milk
2 cups chicken broth
1 soup can filled with water
2 cups fresh broccoli (frozen can used also)
1 cup shredded cheese

  • Put all ingredients in crock-pot. Cook on low for 4-5 hours. Serve with Rolls.

  • For a nutritional boost add 1 tbl of flax seed & wheat germ. Your family gets a boost of fiver without even knowing.

Chicken Cutlets with Apple Celery Slaw

4 chicken breast (boneless, skinless)
Salt & Pepper
1/4 cup bread crumbs
1/4 cup sour cream
3 tbsp olive oil
1 tsp Dijon mustard
1 tbsp lemon juice
2 stalks of celery, thinly sliced
1 granny smith apple, cut into matchsticks

  • Slice chicken into halves to create 8 chicken cutlets. Season with Salt and Pepper. Coat in bread crumbs.
  • Heat 2 tbsp of olive oil in a skillet over medium heat. Cook chicken until golden brown on both sides.
  • Meanwhile in a medium sized bowl, Combine mustard, lemon juice, and sour cream. Add celery and apples. Toss to combine.
  • Serve with cooked chicken

Sunrise Breakfast Burritos

6 eggs
1/4 cup chopped spinach
1/4 cup Parmesan cheese
6 small tortillas
1 tomato chopped
creole seasoning

  • Scramble eggs. Add veggies and cheese. Serve in tortillas with sour cream and fruit.
Beef Taco Skillet with Cornbread Waffles

1 lb ground turkey/beef
1 can condensed tomato soup (10 3/4 ounce)
1 cup water
1/2 cup salsa
1/2 cup shredded cheese.

-Cook beef in skillet until browned. Stir often to separate the meat. Pour off fat. Stir in soup, salsa, and water. Heat to a boil. Reduce heat to low and cook for 5 minutes. Stir. Top with cheese and serve over cornbread waffles.

To make corn bread waffles use the ready made cornbread mix found on Cook cornbread in a waffle maker instead of the oven.

  • You can also serve over rice for all you non-cornbread lovers.

Pancakes with Apple Pie Syrup

Use your favorite pancake recipe or use mine below, using a ready-made-mix

Pancake Mix
10 cups all-purpose flour
2 1/2 cups instant nonfat dry milk
1/2 cup sugar
1/4 cup baking powder
2 tbl salt

Combine all ingredients in a large bowl. Stir together to blend well. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6 to 8 months. Makes about 13 cups of pancake mix.

Perfect Pancakes
for a variety add your favorite fruit to the batter
or chocolate chips

1 1/2 cups PANCAKE MIX
1 egg, slightly beaten
1 cup water
3 tbl vegetable oil

Put pancake mix in a medium bowl. Combine egg, water, and oil in a small bowl. Mix well. Add egg mixture to pancake mix. Add more water for thinner pancakes. Blend well. Let stand for 5 minutes. Cook on a hot griddle about 3 to 4 minutes, until browned on both sides. Makes 10 to 12 4-inch pancakes.

Top with apple pie syrup and a dollop of whip cream. YUM!


Remember to always check your pantry first. Always use what you have on hand FIRST. Why buy it if you already have it :)
