I used up more of my mangoes I received this week from Bountiful Baskets. We had Mango pancakes yesterday...oh my sweetness. I have a new favorite pancake. I substituted 1/4 cup mango puree for the egg in my Ready Made Pancake Mix. Super easy and oh so yummy! How do you do your pancakes?

* When making my pancake mix I do half white flour and half whole wheat flour.

Serve this with Homemade Maple Syrup

  1. What a great idea, would have never thought to add mango. I cannot eat egg so always substitute the egg for applesauce, but your mango idea sound delicious. Thanks for sharing!
