Meal Idea: Make Your Own Salad Night

Morning Lovelies! Today I don't really have a recipe to share, but I do have a meal idea. Every week or so, when we are rolling in lettuce from Bountiful Baskets, I like to have a make your own salad night. I usually cook some black beans in my pressure cooker, chop some tomatoes, make ranch dressing or honey mustard, and I put out any other salad toppings I can think of. This is one meal my kids actually love! Can you believe it? Kids actually wanting to eat a salad. Who da thunk it!?  The whole process of making your own salad combination is fun to my littles and me too! Although sometimes I have to rein in Miss Priss. She thinks she can eat like a full grown man. Haha! Below is a list of different salad toppings. Most things you probably already have in your pantry :)


 Salad Toppings We Love

bell peppers
corn
shredded cheese
olives
tomatoes
shredded carrots
sliced cucumbers
sliced mushrooms
beets
sun dried tomatoes
red onion
broccoli
cauliflower
peas
celery
radishes
grilled chicken or steak - (great use of leftovers)
hard boiled eggs
soy nuts
almonds
pomegranate seeds
sesame seeds
dried fruit- raisins, craisins, cherries, etc
tofu
pecans
crumbled goat cheese
avocado
tortilla strips
crispy noodles


There are so many ways to make your salad night fun! Get creative and have a yummy, healthy meal!

  1. I do something along the same line called ''make your own taco.'' It's a good way to finish off random leftover food.

  2. I found that the trick to making my husband want to eat a salad is to include a hard boiled egg. As long as there's an egg, he's excited about salad dinners! :P

  3. I woke up this morning with no inspiration on what to make for dinner tonight with everyone needing to be here there and everywhere for dinner. Thank you for this idea I now know what to make :)
