Chocolate Dipped Peanutbutter Cookies

Good morning lovelies! I want all of you dealing with the crazy winter weather to know you're in my thoughts and prayers. Stay warm and safe! If any of you are home due to a snow day, here is a yummy cookie recipe to help warm up your day. If you are not having a snow day, you should still make these cookies. Your taste buds will thank you!  This one comes from Gooseberry Patch Old Fashioned Cookies. 

Chocolate Dipped Peanutbutter Cookies

1/2 cup shortening (butter flavored)
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup creamy peanutbutter
1 egg
1/2 tsp. vanilla
2 cups flour
1/2 tsp salt
1/2 tsp baking soda

Cream shortening, sugars, and peanutbutter together in a mixing bowl. Add egg and vanilla.  Mix until light and fluffy. Add dry ingredients. Mix completely.  Form into 1" balls. Place on a greased baking pan. Bake at 350 degrees for 12-15 minutes. Makes about 3 dozen.


*Notes: I make my cookies bigger than 1 inch, so I only get about 2 dozen. You can also replace the shortening with butter or margarine. The amount doesn't change.




To dip them: place Wilson melting chocolate in your Chocolate Pro. You can also melt your chocolate in a double boiler. Place a small pot on the stove with water in it. Place a bowl inside with the Chocolate pieces. The water will boil and create steam, which will heat the metal bowl and melt the chocolate. 

You can dip your cookies right into the melted chocolate or spoon heaping spoonfuls onto each cookie. I always go for the heaping spoonfuls :)
