Can you believe it? I actually baked a pie! I have been giving myself little pats on the back all week. Pie making has been something I wanted to try for a long time. Now I know that I can not toot my horn too loudly, since ya know it does have a few flaws. I think next time I'll bake it a bit more to get a bit more brown on my crust, but it came out and the crust was actually baked! Can you tell I am pretty stoked! I used a ready made pie crust (I am working up to the from scratch kind), but I did make my own pie filling. This stuff is yummy. We love to not only have it on pie, but as a topping for waffles too! Add some homemade whipped cream and your golden!

Homemade Apple Pie Filling

4 1/2 cups white sugar
1 cup cornstarch
2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tsp salt
10 cups water
3 tbl lemon juice
6 pounds of apples (we love granny smith apples the best!)

In a large pan, mix sugar, cornstarch, cinnamon, and nutmeg. Add salt and water. Mix well. Bring to a boil and cook until thick and bubbly. Remove from heat and add lemon juice. Next, Sterilize canning jars, lids, and rings by boiling them in a large pot of water. Peel core and slice apples. Pack the sliced apples into the hot canning jars, leaving 1/2 inch head space. Fill jars with hot syrup and gently remove air bubbles with a knife. Put lids on and process in a water bath for 20 minutes.

  1. If you arent going to can the filling (I keep mine in the fridge or freezer, if never lasts that long), you probably dont have to add lemon juice. I make mine with just apples and one cup of apple cider or apple juice, sometimes a dash of cinnamon. But no sugar or anything else. The kids love it as pie and on top of oatmeal! Apple pie is my favorite thing to make after we spend a day apple picking and the whole family goes crazy for it!

  2. Making Apple pies is my favorite. I actually learned how to do a from scratch when I was a teenager and it's pretty simple. If you don't want to do canning the easiest thing is to get some granny smiths -- cut them up and put them directly in your pie crust and then pour sugar and cinnamon and any other spices you want on top then roll the apple and sugar mixture around together. Not sure exactly on how much but its just until everything is well coated. Then you just add your top layer of crust and bake. It turns out SO good so just another way to do it. :)
