Alright lovelies! I am like two days late, but I was bound and determined to get last week's meals on the blog. I have recipes and some tips and tricks thrown in as well. Monday 1/19/15- BBQ Meatballs, Mashed Potatoes, and Steamed Zucchini
When I did a freezer clean out this month, I saw that I had a lot of ground turkey and ground turkey sausage. A few months ago I stocked up when ground turkey was $1.99/lb. I bought a case and it has been lasting us for a long time. When I counted them up, I found that I had 20 lbs of ground turkey in my freezer. I decided that some freezer cooking was needed to be had. I made some oven baked meatballs to put in the freezer. I made a big batch of meatballs on Monday. I divide my oven baked meatball recipe into three meals. I used one serving that night for BBQ meatballs. This is one of my kids favorites. Meatballs + a bottle of BBQ sauce= a quick and easy meal. I used up leftover BBQ sauce I had in my fridge on this recipe too!
For the mashed potatoes I cooked my potatoes in the pressure cooker and then threw my cooked potatoes into my mixer. I added cream cheese, butter, garlic salt, and some milk. They were creamy and delicious!
I steamed zucchini in my rice cooker :) Yum!
Tuesday 1/20/15 - Crock-pot Chicken Legs with Potatoes and Carrots
This was one of those "throw everything in that needs to be used" sort of meals. I had found chicken legs at the bottom of my freezer when I did my freezer clean out. I was super surprised when I dug these bad boys up. I thought I had used all my chicken legs last month. This was a nice surprise, since chicken legs are one of Libby's favorites. When chicken legs are on the menu, she becomes a wild animal. No joke people. I am always amazed how she clears the bone. That girl commits and leaves nothing behind. I also had some potatoes and carrots I wanted to use up before getting my Bountiful Basket this week, so they were thrown into the crock-pot as well.
I placed my chicken legs, vegetables, and seasoning in the crock-pot and allowed them to cook all day. When Hubby got home from work in the evening, dinner was ready to go.
Wednesday 1/21/15 - Lentil Burgers with veggies and fruit
A great way to save money on groceries is by working in items that are low cost. Using lentils in place of meat you save. You also are able to clean out that fridge of your sby using up eggs, veggies, etc. I love making patties like these towards the end of the month when I want to start cleaning out my fridge in preparation for the upcoming month's shopping trip.
You can find the recipe I used here. It came in this month's Family Fun Magazine. My grandma got me a subscription and I have loved trying out the different recipes in there.
I served ours with veggies and crockpot mac and cheese. The mac and cheese was ok, but everything else was yummy

Saturday 1/24/15 - Tilapia with Rice and Steamed Veggies-
This was a super easy meal to make. I purchased fish fillets at Wal-Mart in a family value bag. They were all individually packaged. I bought the bag of tilapia fillets for under $9 and was able to use half on this night and the other half will be saved for a meal sometime next month. I served my fish with this simple garlic toast recipe I shared a while back on the blog. This is a quick garlic bread recipe and is one I use a few times a week. I love it!
Sunday 1/25/15 - Baked Potato Night
On Sunday we had family over for dinner. My Aunt is in town from back east and I really wanted to be able to have the whole family over for dinner. Sundays are sometimes hard for me because w eget out fo church at 2 and then we eat lunch. With eating lunch so late, sometimes hubby and I give the kids leftovers and we eat some later on when they've gone to bed. On this night I had t come up with something that was filling, but also not too heavy for us. I choose simple baked potatoes. I put out veggies, cheese, and sour cream for topping and I served it with a greek salad. It was really delicious and perfect for a busy Sunday night with family:)
Monday 1/26/15- Italian Eggplant Parmigiana
I recently checked out Mormon Mama Italian Cookbook from the library. I've been wanting some yummy Italian food, so this seemed like a great pick for this week's meal plan. I checked out my fridge and then devoured the pages of the book. When I saw a recipe for baked eggplant, I knew I needed to make it. I have been really like cooking with eggplant. It is a great way to substitute meat in a meal and it is good for you too!
Tuesday 1/27/15- Olive Garden
Since we have family in town from back east, my parents took everyone to Olive Garden. Thanks Mom and Dad. Our food was delicious! We brought home the leftovers and will be able to eat the leftovers tonight for dinner. Yum!
