Bake and Freeze Broccoli at Home to Save $$$...

A few weeks ago I was able to snag a box of broccoli from Bountiful Baskets. I was able to get 20 lbs. of broccoli for $12.50. That made it 62 cents a pound. We love eating broccoli. Fresh or frozen, we love it either way. A lot of times I try to snag some frozen broccoli when it is $1 at the grocery store. When I saw that I could get a box so cheap, I thought I would try my hand at freezing my own.

The first few days we actually baked it and ate it with almost every meal. I'm not exaggerating people. Baked broccoli has now become one of my favorite side dishes. Once I binged on broccoli, I decided to get to freezing everything left in the box. It was very simple to bake and freeze the broccoli.

I have included the recipe below. For everyday baking I include seasoning, but for freezing I omitted it. I wanted to keep it simple, so I could throw this broccoli into soups and casseroles.

I did my broccoli in batches and allowed it to cool completely before placing in a freezer bag (I used gallon size). Make sure you label and date your bags. I was able to get seven bags of broccoli. Had we not munched on a good portion of it, before freezing, I would have been able to get more. I love having bags of ready to go veggies in my freezer. Doing it myself, now means I have one less thing to buy at the grocery store. I recently used a bag of broccoli in a vegetarian stroganoff and it was a great addition. The broccoli was nice and crisp. Yum!

Baked Broccoli

Preheat your oven to 425'. Place washed broccoli on a baking sheet sprayed with olive oil. Next spray your broccoli with olive oil and your favorite seaosnings. I usually do garlic salt. Bake for 10 minutes and serve.

  2. We love broccoli too.. I usually by the bags of frozen when it goes on sale for $1. I steam it..But, I am going to try the baking..thanks for sharing.
