A few weeks ago I shared a picture of this fruit salad in a Family Meals on a Budget post. You guys mentioned how amazing it looked (it tasted even better), so I thought I'd share how I make it. Fruit salads make great side dishes because they can use up whatever fruit you have lingering in your fridge and they only take a few minutes to make. Oh and the fact that they are generally a crowd pleaser doesn't hurt either :)
For me I prefer to have bananas in all of my fruit salads. It is a preference of mine, so I always start with that. I then pulled out all the other fruits I wanted to include in my salad. Below I have listed what I included and the measurements. For the strawberries I used about 8. My strawberries were pretty large. You pretty much want to eye ball it. You want a colorful, rainbow salad. The more colors, the more yummy it will be. For reals :)
Kiwi Banana Fruit Salad
3 banana, sliced
5 small kiwi, sliced
2 apples, chopped
2 handfuls of blueberries
8 strawberries, hulled and chopped
1 small bunch of grapes (like it could fit in the palm of your hand)
Combine all fruit together and toss. Serve and enjoy!
Easy peasy right? I like to keep my grapes whole, but you could totally slice them in half as well. Oh and placing it in a fun dish is always a must! This vintage Pyrex dish was my grandmothers. I love thinking of all the fabulous dishes she must have served in it. I am thankful I get to carry on that tradition with my own family. :)

ReplyDeleteThe fruit salad looks so yummy. Such a lovely variety of fruits.. I too, just use which ever fruits , I have on hand.. I sometimes, add cool whip and a box of sugar free jello.. [I just mix the box of jello to the cool whip, and then add the fruit..Ready to eat..

ReplyDeleteYour fruit salad looks SO good!! I am a big fan of fruit salads, too. I wanted to pass along a dressing recipe that will make your salad even more yummy.
Oh, and have you ever added mandaring oranges to this salad?...I know you just bought some :) Give that a try if you haven't already.
1/4 cup honey
2 tsp lime zest (zest of 2 medium limes)
1 Tbsp fresh lime juice
Directions
Note -- I take an extra tablespoon or two of lime juice and toss my banana slices in it before putting them in the salad. It adds to the dressing flavor, and keeps the bananas from turning brown and icky.
In a small mixing bowl, whisk together they honey, lime zest and lime juice. Pour over fruit just before serving and toss to evenly coat (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating).

Looks great!! When we do fruit salad at my house we make a yogurt topping of plain or vanilla yogurt with some finely shredded ginger in it. Just a little on top gives it an interesting addition to the salad.
