Freezer Meals: Pam's Spinach Squares...

Morning lovelies!! I am back with another freezer meal for ya'll. This is a super simple one to throw together. I made this as a double batch. We ate half for a Sunday lunch and I froze the rest.

Often, when I am doing a freezer meal, I try to cook it for a meal and then double or triple the batch, so that I can freeze any leftovers. This helps me when I don't have time to designate a whole day or weekend to freezer cooking.

I love this recipe because you can really tweak it with whatever you have in your fridge. I've added leftover meat before. I've also added leftover veggies, like zucchini and tomatoes. Get creative and make something your family would love!

Pam's Spinach Squares

1 cup all-purpose flour
1 tsp salt
1 tsp baking powder
2 eggs beaten
1 cup milk
1/2 cup melted butter
10-oz pkg frozen chopped spinach, thawed and drained*
1 lb. shredded sharp cheddar cheese
1 onion, chopped

Combine flour, salt, and baking powder. Add eggs, milk, and butter; stir. Add remaining ingredients and pour into a lightly greased 9x13 baking pan. Bake at 350' for 35 minutes, or until bubbly around the edges. Cut into squares and serve warm.

Freezer Method: Bake as directed and cut into squares. Place on a baking sheet and freeze. Once frozen, place in bags. Don't forget to label, date, and write cooking instructions on your freezer bag. To serve, place frozen squares on a baking sheet. Bake at 350' for 20 minutes, until golden.

*I substituted fresh spinach that I cooked, for the frozen spinach called for in this recipe. I also added 1/2 cup of leftover bacon.

  1. What did you serve with this to make it a complete meal? Did you consider this your protein or a side?

    1. Great question! I served it as a main and I paired it with some pasta and veggies. You could totally do it as a side as well. I guess it just depends on your preference and whether you do it as a lunch or dinner:)
