Freezer Meals: Blueberry and Cream Cheese French Toast Casserole...


Sometimes you just crave some sweet yummy goodness for dinner....well at least I do. This past week I was crazing some breakfast comfort for dinner, so I went to my shelf of cookbooks to find my recipe for french toast casserole. It's a favorite of mine I like to make once the weather cools and I can start using my oven again.

This french toast is a favorite because it's quick to throw together and you can prepare it ahead of time....oh and it feeds a lot so you can share it with your friends and family.

When I made this recipe, I doubled it. I made one for us to eat that night and another to put in the freezer. I cooked my casserole that I placed in the freezer. Now I have french toast casserole to enjoy later in the month. I love having a few saving graces in my freezer chest. It makes this mama happy :)

So here's how you make it...easy peasy :)

Blueberry and Cream Cheese French Toast Casserole

1 20 oz loaf of bread, cubed
1 8 oz package cream cheese
1 cup blueberries, fresh or frozen
12 eggs, beaten
2 cups milk
1 tsp vanilla
1 1/3 cups maple syrup
Powdered Sugar

Place half the bread cubes in a greased 9x13 in. pan. Layer cream cheese cubes evenly over bread. Sprinkle with blueberries. Cover with remaining bread cubes.



In a large bowl, whisk together eggs, milk, vanilla, and syrup. Drizzle egg mixture evenly over bread. Cover and refrigerate for two hours or overnight. Remove 30 minutes before baking. Preheat oven to 350'. Let casserole come to room temperature, then cover with foil and bake 30 minutes. Uncover and bake 25-30 minutes more. Serve with powdered sugar and syrup.

  2. Although it does look delicious Danielle, there is virtually nothing healthy in it with the exception of the milk (unless you are using whole milk) and the fruit. It has FAR too many ingredients that are responsible for why so many people (including children) are overweight and developing type 2 Diabetes. If you break down this recipe, and if 4 people eat the whole thing in one sitting, that means each person is consuming 5oz of bread (starchy Carb.), 3 eggs, 1/3 cup maple syrup (sugar), and who knows how much powdered sugar. The amount of maple syrup per person will affect every person's glucose level. This recipe is truly a no no for anybody who is either trying to lose weight and/or watch their sugar/starch intake. I realize that you are trying to stay within your budget, but feeding the family ANYTHING that is high in sugar and starchy carbs is NOT a good idea. I also know (as a nurse) that one of the reasons that type 2 Diabetes has skyrocketed (especially in kids) is that they are getting less exercise than when you and I were kids, as well as their diet. We were told to "go outside and play", and these days kids are very sedentary and spending more time on the computer, playing video games, anything and everything that does NOT involve getting exercise. And with the economy the way it is, and everyone trying to stretch their dollar, foods that are made with ALOT of processed sugars and starchy carbs are are plentiful and cheap to buy. The more LOW carb foods that are also LOW in sugar (any ingredient that ends in "ose" means sugar of some type) you can feed your family the better. And I HAVE seen healthier recipes that you have posted on your site. BTW--LOVE your book!! Remember, less sugars and starchy carbs, and more play that involves exercise.     1. Thank you so much. I truly appreciate your comment and concern. This recipe definitely feeds more than four. We usually get about three meals out of it. This one is definitely a comfort food treat and not one we eat every week :)

    2. Good to hear that it feeds more than 4 people. BTW, I forgot to mention that I too have POCE, and was reading an article recently that states that women with POCE have a very high chance of developing something called "Metabolic Syndrome" (look it up),which in fact DOES lead to type 2 Diabetes. So, just another reason to be mindful of those starchy carbs and sugars!! After all, you DO want you AND your family to be healthy in the future as well, and I know that you would like more children. One of the best ways to protect your fertility, is to avoid those things which will make your condition worse (I know, I've been there)!

  6. We did end up making this for Christmas breakfast and it was a hit. One pan fed 6 adults and 2 kids and we had a few servings leftover. Definitely a new holiday tradition breakfast for us!
