Great Grandmas Coconut Oatmeal Cookies...

I am sharing an old recipe today friends. Like it's from the 1920's kind of old. You see I have this book called "Grandmother Remembers". It's a memory book my Dad's Mom made for me many years ago. Grandma Lybbert has since left this life, but her stories and writings remain.

In one section of this book, she shares some old family recipes. From doughnuts to cookies, she includes her tips in her beautiful print. With one recipe though, she included a copy of the original recipe from 1920. It is stained from splashes of milk and eggs, so Grandma hand wrote the recipe out for me in pen.

I couldn't help but think of my great grandmother preparing these treats for her own family so many years ago....

Then my grandmother preparing these for my own dad and his many brothers and sisters. I felt a bond to these women who left this Earth before I really got to know them.
I would of sat with them and talked for sure. They were both pretty amazing ladies.

So today I share a bit of my history....

A bit of my past...

Coconut Oatmeal Cookies

1 cup melted butter
1 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 cup shredded coconut
1 1/2 cup flour
1 1/2 cup oats

Add raisins or chocolate chips if desired. I added a cup of both :)

Cream together sugars and butter. Mix in remaining wet ingredients. Next add dry. Mix to combine. Add in raisins and chocolate chips if using. Stir to combine. Drop by rounded spoonfuls on greased baking trays. Bake for 10-12 minutes @350'
