Simple Vegan White Bread for the Bread Machine...


I just have to gush about this new bread recipe I've been making in the bread machine lately. I found it one day after searching for "vegan bread machine recipes". I recently went plant based again (I'll share more on that at another time). I was super skeptical about the recipe. I mean how could bread taste good without milk and oil? Oh I forgot to mention I've cut out oil as well...or at least really limited it (I'll see how long I can keep that one up. We're going on three weeks).

Our usual go to is a buttermilk bread, which I've been making for years. I was ready for the kids to grab their pitchforks and completely rebel when offered this new recipe.

I made the dough in my bread machine and finished it in the oven. I love the loaf pan shape, when you bake it in the oven. :)

Once it came out of the oven, the kids were very eager to try it. It smelled delicious. We let it cool and then sliced it up. I sat back and waited to see how it fared with the red heads. When they reached for a second piece, I knew they approved.

I have since made this bread every single day this week. We've had it for snacks, for breakfast, and as a side dish with dinner once or twice. Saying we like it is an understatement for sure....we've also meet our carb quota for the month :) ::wink::

The recipe is originally from the blog, Plant Based on a Budget. I've tweaked it a bit by replacing white sugar with blue agave. I buy it in a two pack from Costco, but I just realized Amazon sells it as part of their subscribe and save. I plan on ordering it through them from now on. It was about the same price as Costco, but ordering from Amazon means I don't have to get out of my jammies :) Anyways, it's a syrup that has a lower glycemic index than regular sugar. I say use whatever you have on hand though.

Simple Vegan White Bread

1 1/2 cups warm water
2 tbs alternative sweetener or sugar
1 tsp salt
3 1/2 cups white flour
2 1/2 tsp of active dry yeast


Place ingredients in your bread pan, in the order specified by your bread machine manufacture. Mine has me start with liquids, than add dry ingredients, and end with the yeast..

I've also added a tablespoon of oats, ground flax seed, and hemp hearts to some of my loaves for extra healthy goodness

Let your machine do all the work and the baking...or put it on your dough cycle setting. When your dough cycle is through, punch down your dough and shape it into a loaf. Place in a non-stick bread pan and bake for 30 minutes at 350'.

Since we are limiting our oil intake, I did not rub butter on the bread when it came out of the oven. This is a step I usually do when bread making. Feel free to choose whether you want a little bit of that extra goodness on top or not. We thought it was just as delicious without.

The kids and I watched Beauty and the Beast for the first time tonight (the new one with Emma Watson) and OMG guys! All that buzz I've been hearing the past year did not disappoint. The movie was fantastic!! Who's seen it and did you just fall in love with Belle and Beast all over again?
